The designation covers beans obtained from the Fagiolo Bianco and Tondino (or Poverello) Bianco ecotypes of Phaseolus vulgaris L. The production area is defined as the entire territory within the irrigation area of the Basilicata side of the Valle del Mercure valley, encompassing the municipalities of Rotonda, Viggianello, Castelluccio Superiore and Castelluccio Inferiore, all in Potenza Province. All production steps must take place within this defined area. When released as dried beans, the product must have a maximum length of 18 mm and a maximum width of 15 mm, weigh no more than 90 g per 100 beans, and carry a protein content greater than or equal to 24% of dry matter. The tegument must not exceed 6% of total weight. When released as waxy pods, pods must not exceed 20 cm in length or 20 mm in width, and protein content must be greater than or equal to 9% on a wet basis. Cultivation relies on hand operations throughout, including construction of support structures using chestnut-wood stakes sourced from the valley's woods, weeding, and harvesting. Packaging rules specify sealed nets or crates for the fresh product and cardboard boxes or bags of jute or recyclable material for the dry product. Labels must display the name 'Fagioli Bianchi di Rotonda', the wording 'denominazione di origine protetta', and the acronym 'DOP' in larger print than other text.
