About this designation

The geographical area is Cilento, the coastal zone of Campania lying between the mouth of the Sele in the gulf of Salerno and the mouth of the Bussento in the gulf of Policastro, bordered to the north by the Alburno and Cervati massifs. Production, processing and packing must all take place within this area. Planting density may not exceed 700 trees per hectare. Drying must be carried out through direct exposure to the sun; plastic tunnels with a minimum height of two metres may be used as protection, and fruits may be soaked in a solution of hot water and 2 % salt. The specification sets maximum humidity at 26 % and defines minimum sugar content values per 100 g of dry weight. Filling with almonds, walnuts, hazelnuts, fennel seeds or citrus fruit rind is permitted, provided the filling does not exceed 10 % of the total product as sold and the origin of those ingredients within the production area is proved. Packaging must carry the words 'FICO BIANCO DEL CILENTO' and 'DENOMINAZIONE DI ORIGINE PROTETTA' or the abbreviation 'D.O.P.' in letters no less than twice the size of any other print, together with the designated logo.
