Registered as a PGI under file number PGI-IT-0306, with EU protection dating from 21 June 1996, Fungo di Borgotaro covers the fresh and dried sporocarps of four varieties of Boletus section Boletus according to Moser: Boletus aestivalis (locally 'rosso'), Boletus pinophilus (locally 'moro'), Boletus aereus (locally 'magnan'), and Boletus edulis (locally 'fungo del freddo'). The specification permits no other varieties. The production and gathering area comprises suitable zones within the municipalities of Berceto, Borgotaro (Borgo Val di Toro), Albareto, Compiano, Tornolo, and Bedonia in the Province of Parma, and Pontremoli and Zeri in the Province of Massa Carrara. At release for consumption, the scent of sporocarps must be characterised by a clean, non-spicy aroma without notes of hay, liquorice, or fresh wood. Dried product may be marketed only under the qualifiers 'extra', 'special', or 'commercial', each defined by specific requirements for slice composition, flesh colour, larval traces, and darkened hymenium. Fresh sporocarps must carry a water content of no more than 90% of total weight. Dried product must be packaged in wooden, wicker, ceramic, or terracotta containers holding 20, 50, 100, or 200 g, each bearing a progressive serial number and sealed to prevent removal of contents without breaking the seal. Labelling must display 'Fungo di Borgotaro' and 'Indicazione geografica protetta' in printed letters of equal size, together with the designated logo and the Union symbol. The applicant body is the Consorzio per la tutela dell'indicazione geografica protetta Fungo di Borgotaro IGP.
