Extra virgin olive oil produced in named municipalities of the Province of Avellino, Campania, from groves in which the Ravece variety constitutes 60 % or more of the olive composition. The specification permits only mechanical and physical extraction processes and requires milling within 48 hours of harvest. Registered as a PDO under file number PDO-IT-0500, with EU protection dating from 28 September 2005.

Irpinia – Colline dell'Ufita is a PDO extra virgin olive oil produced within a defined area covering named municipalities in the Province of Avellino, Region of Campania, including Ariano Irpino, Bonito, Carife, Casalbore, Flumeri, Grottaminarda, Taurasi and others listed in the specification. The olive variety Ravece must constitute 60 % or more of the grove composition; the varieties Ogliarola, Marinese, Olivella, Ruveia and Vigna della Corte may together account for 40 % or less; and Leccino or Frantoio may be present at 10 % or less. Olives must be harvested by hand or machine without being left on the ground; olives fallen naturally onto the ground or into permanent nets may not be used; and chemical products to induce or assist fruit drop are prohibited. Milling must take place within 48 hours of harvest, using only mechanical and physical processes; a second run and the use of chemical or biochemical aids, including enzymes, are prohibited, as is the use of talc during extraction. The olive yield per tree may not exceed 60 kg, and the maximum oil yield may not exceed 20 % of olive weight. After extraction, oil must be stored in stainless steel containers or terracotta tanks with a food-quality glaze. Packaging for release for consumption must be in dark-glass, ceramic or glazed terracotta bottles or tins of no more than 5 litres, or in single-dose aluminium laminate sachets of 10 ml capacity bearing a serial number allocated by the inspection body. Campanian EVOO from Avellino province (Ufita valley), predominantly Ravece cultivar (rare and distinctive). Medium-intense fruity, robust bitter-pungent profile, characteristic notes of tomato leaf, green almond, and unripe tomato.

Finishing oil on Irpinian rustic preparations, lentils, grilled meats; raw on bruschetta; pairs with Aglianico-based dishes.
