Marrone del Mugello

Godenzo, Scarperia e San Piero a Sieve, Vaglia, and Vicchio Mugello, all within the Province of Florence. Chestnut groves must contain the Florentine Chestnut variety, Marrone Fiorentino, accounting for at least 90% of the chestnut trees. The maximum production yield is set at 2,500 kg of nuts per hectare and, where grove density falls below 80 trees per hectare, at 30 kg per tree; these ceilings apply even in exceptionally fruitful years. Qualifying nuts are of medium-large size, with no more than 90 nuts per kilogram, and are typically three per husk. The fresh product may be released for consumption from 25 September of the year of production. Post-harvest treatment — sorting, sizing, curing in cold water for no more than eight days, or sterilisation in a hot water bath followed by a cold water bath without additives — as well as drying, milling, and packaging, must all be carried out within the production area. The control body is the Consorzio di Tutela del Marrone del Mugello IGP, based in Borgo San Lorenzo.
