The fruit is characterised by an ellipsoidal shape, a tobacco-brown to reddish pericarp with 25 to 30 darker stripes, and a medium to large size with no more than 85 fruit per kilogram.

Marrone della Valle di Susa received PGI protection on 8 November 2006 under file number PGI-IT-0564, registered in eAmbrosia as EUGI00000013814. The designation covers chestnuts obtained from five local ecotypes identified by their municipality of origin: Marrone di San Giorio di Susa, Marrone di Meana di Susa, Marrone di Sant'Antonino di Susa, Marrone di Bruzolo, and Marrone di Villar Focchiardo. The production area encompasses the entire territory of twenty-eight named municipalities in the Province of Turin, including Almese, Avigliana, Borgone Susa, Bruzolo, Bussoleno, Condove, Meana di Susa, San Giorio di Susa, Sant'Antonino di Susa, Susa, Villar Focchiardo, and others. The specification requires that harvesting, grading, cleaning, sizing, and the traditional 'curatura' soaking process all take place within the defined geographical area. Produce not placed on the market within 30 days of harvest must undergo 'curatura', carried out either by soaking in cold water at ambient temperature for two to eight days, or by soaking in hot water at 48 °C for 50 minutes followed by cold water for a further 50 minutes. The fresh product may be released for consumption from 25 September of the year of production. On release, each package must bear a label carrying the PGI logo — depicting a bag of chestnuts tipped forwards with chestnuts pouring out — together with the designation name in clear and indelible lettering.
