The designation covers chestnuts produced from a local ecotype of the Marrone variety grown in the mountain regions of the municipality of Caprese Michelangelo and the part of the municipality of Anghiari lying north of the strada provinciale 57 'Catenaia' to the border with the municipality of Sabbiano, both in the province of Arezzo. In chestnut groves in production, tree density must not exceed 120 per hectare, and no more than 10 % of plants may come from other varieties, permitted solely for pollination. Harvesting may begin from 20 September and may not be carried out by shaking branches or by mechanical or chemical methods that anticipate or accelerate separation from the tree. For fresh consumption, only nuts of the Marrone variety are permitted; the number of nuts must not exceed 90 per kg, and non-conforming nuts must not exceed 5 % of total weight. Dried chestnuts are produced by drying, using a wood-fired or hot-air dryer, and then peeling; the drying process must be completed within 40 days of the chestnuts being placed on the drying mats. Production and packing must take place within the defined geographical area. The inspection body is the Camera di Commercio di Arezzo. Labels must bear the words Marrone di Caprese Michelangelo and Denominazione di Origine Protetta in larger lettering than any other information, together with the words Prodotto della Montagna, the PDO logo, and the business name of the packing station.
