Marrone di Combai

Marrone di Combai is a chestnut ecotype grown in Alpine foothill municipalities of Treviso province, Veneto. The fruit is ellipsoidal with a flattened apex, a pericarp ranging from light to dark brown with evident streaks, and flesh of floury texture and whitish colour. Two commercial grades, Extra and Class I, are defined by fruit count per kilogram and maximum permitted defect tolerances.

The designated production area comprises eleven municipalities in Treviso province: Cison di Valmarino, Cordignano, Follina, Fregona, Miane, Revine Lago, Sarmede, Segusino, Tarzo, Valdobbiadene, and Vittorio Veneto. All production steps must take place within this area. Extra class fruit is defined as 50 to 80 fruit per kilogram, with a maximum 4 % by weight of fruit with endocarp affected by insects and a maximum 3 % by weight with pericarp damage. Class I is defined as 81 to 105 fruit per kilogram, with a maximum 6 % by weight affected by insects and a maximum 5 % with pericarp damage. The specification mandates a post-harvest process called curatura, consisting of immersing the chestnuts in water at room temperature for five to seven days, with the water changed at the halfway stage. Where curatura takes place outside the geographical area, it must begin within 24 hours of harvesting, or the fruit must first be held in cold storage at 0,5 °C to 2 °C and 95 % to 98 % humidity for a maximum of three days. Each package must carry a label bearing the words 'Marrone di Combai' and the official logo, a stylised chestnut in a dark brown square rendered in Pantone 465U and Pantone 4625U, verified by the inspection body.
