Miele delle Dolomiti Bellunesi is produced from the nectar of flowers in the mountainous Belluno region by the local ecotype of Apis mellifera, which results from the natural cross-breeding of various honey bee subspecies, predominantly the Italian bee and the Carniolan honey bee. The designation covers six honey types — Millefiori (Wildflower), Acacia, Tiglio (Lime), Castagno (Chestnut), Rododendro (Rhododendron) and Tarassaco (Dandelion) — each subject to mandatory chemico-physical parameters. All types must have an HMF content below 10 mg per kg at the time of release for consumption. Each type is further defined by minimum and maximum values for water content, pH, and fructose plus glucose content, as well as type-specific pollen spectrum requirements: Acacia must contain more than 30% Robinia pseudoacacia L. pollen; Castagno more than 70% Castanea sativa M.; Rododendro more than 20% Rhododendron spp.; Tiglio more than 10% Tilia spp.; and Tarassaco between 5% and 30% Taraxacum spp. The flora of the Belluno area comprises over 2,200 species. The designation is held by the Consorzio di Tutela del Miele delle Dolomiti Bellunesi DOP and is registered in the EU register under eAmbrosia identifier EUGI00000013842.
