About this designation
Olio di Calabria is an extra-virgin olive oil whose production area comprises the entire territory of the Calabria region of Italy. All stages of production — cultivation, harvesting, and oil extraction — must take place within that area. The oil must be composed of at least 90 % oil from the following named native cultivars: Carolea, Dolce di Rossano (synonym: Rossanese), Sinopolese (synonym: Chianota, Coccitana), Grossa di Gerace (synonym: Mammolese, Geracitana, Dolce), Tondina (synonym: Roggianella), Ottobratica (synonym: Dedarico, Perciasacchi), Grossa di Cassano (synonym: Cassanese), and Tonda di Strongoli. The remaining 10 % may come from a defined list of less widespread local cultivars, and up to 3 % may come from other national cultivars serving as pollinators. The specification sets mandatory chemico-physical thresholds: oleic acid content of at least 70 %, acidity no greater than 0.50 %, peroxide value no greater than 12 meq O₂/kg, and total polyphenols of at least 200 ppm. After extraction, oil must be stored in stainless steel or other suitable containers at temperatures between 12 °C and 20 °C. The oil must be released for consumption in dark-glass, ceramic, glazed terracotta, or tin containers of no more than 5 litres. Labels must display the registered name in distinct and indelible lettering, the official logo, and the year of production of the olives. The applicant body is the Consorzio per la Tutela e la Valorizzazione dell'olio extra vergine di oliva Olio di Calabria IGP.
