Growing, processing, and packaging must all be carried out within this defined area. The specification describes the product as having a uniform colour ranging from green to pale yellow, with a somewhat tart taste and a slightly bitter aftertaste, crunchy flesh that is thick, smooth, and compact. For the stuffed form, the bread coating must remain stuck to the olive and appear compact when broken. The physical specification states that one kilogram of stuffed olives must comprise a minimum of 65 and a maximum of 95 units.
