Registered as a PDO under file number PDO-IT-0349, with EU protection dating from 15 June 2004, Patata di Bologna is produced exclusively within the Province of Bologna. The specification permits only the Primura variety. Tubers must be regular and elongated oval in shape, with smooth, intact skin, superficial shallow eyes, and a size between 40 mm and 75 mm. Firm texture and a colour ranging from white to pale yellow are required characteristics. The average composition per 100 grams of edible potato is specified in the product specification, including water content from 70 % to 85 %, protein from 1.8 % to 2.2 %, carbohydrates from 13.5 % to 17.0 %, and dry matter content of 19 % to 20 %. Maximum production is set at 60 tonnes per hectare. Continuous cropping is not permitted; potatoes may be grown on the same plot only after other crops have been grown there for two years. Certified seed potatoes must undergo presprouting before sowing. After harvest, potatoes are stored in cold rooms at a controlled temperature of between 4 °C and 7 °C, away from light. Both cultivation and packing must take place within the Province of Bologna. The designated inspection body is Check Fruit s.r.l., based in Bologna. Packaging must bear the words 'Patata di Bologna' followed by 'D.O.P.' and a specified logo comprising a stylised potato crossed by two diagonal red and blue bands, with colour values defined by Pantone references in the specification.
