Registered as a PDO under file number PDO-IT-1148, with EU protection granted on 28 November 2013 and eAmbrosia identifier EUGI00000014555, Patata novella di Galatina covers tubers of the species Solanum tuberosum, variety Sieglinde, grown and harvested exclusively within the administrative territories of nineteen communes in the province of Lecce: Acquarica del Capo, Alliste, Casarano, Castrignano del Capo, Galatina, Galatone, Gallipoli, Matino, Melissano, Morciano di Leuca, Nardò, Parabita, Patù, Presicce, Racale, Salve, Sannicola, Taviano, and Ugento. All production phases, from cultivation through to harvest, must take place within this delimited area. The specification permits no variety other than Sieglinde. Tubers must be whole, ungerminated, free from malformations, greening, cracks, bruising, and pathological alterations. Chemical requirements set a maximum starch content of 17% and a maximum dry-matter content of 21%. Harvest must be completed before 30 June of each year. After harvest and sorting, tubers are not washed, so that the characteristic rust-coloured soil residue from the red soils of the production area is retained on the skin. Harvesting is carried out using simple mechanical instruments that do not come into direct contact with the tubers. Packaging labels must display the protected name in characters larger than any other text, the production and packaging area, the name and address of the packer, net weight at origin, calibre, lot identification number, harvest period, packaging date, and the European Union symbol.
