The designation is reserved for the fruit of Pistacia vera, cultivar Napoletana, also known as Bianca or Nostrale, grafted onto Pistacia terebinthus. Up to 5 % of plants of varieties or rootstock other than P. terebinthus are permitted across the grove, but products from plants not belonging to the Napoletana cultivar will not be certified. The geographical area is confined to the municipalities of Bronte, Adrano and Biancavilla in the Province of Catania, at between 400 m and 900 m above sea level, on lava soils where Pistacia terebinthus grows spontaneously. Harvesting takes place by hand, from the second ten days of August to the first ten days of October. Within 24 hours of harvesting, the fruit must be husked mechanically. The in-shell product must then be dried in direct sunlight or by another drying system, maintaining the product temperature between 40 °C and 50 °C, until residual moisture content is between 4 % and 6 %. The use of chemicals for conservation is strictly prohibited. The product may be stored for up to 24 months after harvesting. Packaging must carry the PDO logo, which incorporates the words 'Denominazione d'Origine Protetta D.O.P.', an image of Mount Etna, and the words 'Pistacchio Verde di Bronte'. The inspection body is Corfilcarni-GCC, based in Messina.
