The caryopsis must meet biometric requirements: length 5,6–5,8 mm, width 3,4–3,6 mm, thickness 2,0–2,2 mm, and a length-to-width ratio of 1,5–1,7. Physico-chemical parameters require amylose content of no less than 21 % dry matter, gelatinisation time between 15 and 20 minutes, consistency index of no less than 0,85 kg/cm², and viscosity index of no more than 2,5 g/cm. Processing takes place in local rice-mills within the area. The grain is not completely hulled and bleached, remaining partially covered by the pericarp. The inspection body is Ente Nazionale Risi, Milan. Labelling must bear the wording 'Riso Nano Vialone Veronese IGP' and the designated logo depicting Cangrande della Scala on horseback with a rice panicle on a black background.
