Sabina

Sabina is an Italian extra virgin olive oil produced in a delimited zone spanning parts of the provinces of Rome and Rieti in Lazio, lying to the east of the River Tiber. The oil must be obtained from groves composed of at least 75 % of ten named olive varieties, and its total maximum acidity may not exceed 0,6 g per 100 g of oil.
About this designation
Sabina PDO designates an extra virgin olive oil whose production area is confined to municipalities and towns in the provinces of Rome and Rieti, all situated to the east of the River Tiber. The specification requires that groves consist of at least 75 % of the following varieties, singly or in combination: Carboncella, Leccino, Raja, Pendolino, Frantoio, Moraiolo, Olivastrone, Salviana, Olivago, and Rosciola; up to 25 % of other varieties present in the grove may be used. Only groves with loose, permeable, dry but not arid calcareous soil are eligible. The maximum grove yield may not exceed 6 300 kg of olives per hectare. Harvesting and oil extraction must take place between 1 October and 31 January of each marketing year, and both extraction and packing must occur within the designated production area. When released for consumption, the oil must display a colour described as yellowy-green with golden tinges, a peroxide number not exceeding 14 meq O₂/kg, a minimum oleic acid content of 68 %, and a total maximum acidity not exceeding 0,6 g per 100 g of oil; the panel-test median for fruitiness must be greater than 0 and the median for defects must equal 0. Each container, which may hold a maximum of 5 litres, must bear a serial number issued by the inspection body, C.C.I.A.A. di Roma, and the year of production. The designation is protected under file number PDO-IT-1511 and is managed by the Consorzio Sabina DOP.
