All growth phases — sac-fry, fingerlings, and adult-char stages — and the slaughter process must take place within this defined area. At the point of release for consumption, the fish must display a grey-green or brown colouring with whitish, yellow, or rose-coloured speckles on the back and flanks, orange fins with a white front edge, and a grey dorsal and tail fin. The condition factor must not exceed 1.10 for fish weighing up to 400 grams or 1.20 for fish weighing over 400 grams, and the total fat content of the meat must not exceed 6%. Fish feed must not contain GMOs and must carry appropriate certification. The salmon colour of the flesh must be obtained using mainly the astaxanthin carotenoid pigment and/or naturally-derived carotenoids. Whole or gutted fish sold under the designation must weigh at least 170 g; filleted or sliced product must weigh at least 80 g. Every package must carry the expression 'Indicazione Geografica Protetta' or the abbreviation 'IGP', the registered logo, the European PGI symbol, and a number or reference code identifying the producer and/or batch.
