The cheese is cast in a quadrangular parallelepiped shape: flat sides measure between 11 cm and 13 cm or between 17 cm and 19 cm, the straight heel between 9 cm and 15 cm, and weight falls between 1,3 kg and 1,9 kg or between 3 kg and 5 kg, with a permitted tolerance not exceeding ± 10 %. The minimum maturing period is 75 days, during which the rind is periodically washed; producers sponge and brush each cheese using water and salt or food oil, marc, and herbs. At least 50 % of the cows' diet must be composed of feedingstuffs grown on the holding or within the production area, and at least 60 % of the dry matter in the daily fodder ration must originate from that same defined area.
