Squacquerone di Romagna is a soft, rapidly maturing cow's milk cheese produced in the Emilia-Romagna provinces of Ravenna, Forlì-Cesena, Rimini, Bologna, and part of Ferrara. It is rindless, mother-of-pearl white, and entirely spreadable, with a taste described in the specification as pleasant, sweet, slightly acidic and subtly salty, and an aroma characterised as delicate with a grassy note.

The production area covers the Emilia-Romagna provinces of Ravenna, Forlì-Cesena, Rimini and Bologna, together with the part of the province of Ferrara bordered on the west by trunk road No 64 (Porrettana) and on the north by the River Po. Both milk production and processing must take place within this defined area, and the cheese must also be packaged there. The specification requires that at least 60 % of the dry matter of the cattle's total ration consist of forage and silage composed of legumes and grasses grown exclusively within the geographical area. The cheese is made from whole cow's milk. At the point of release for consumption it must weigh between 0,1 kg and 2 kg, display a fat content of dry matter between 46 and 59 %, a water content between 58 and 69 %, and a pH between 4,75 and 5,35. It has no rind or crust and takes its shape from the container in which it is placed. Packaging must carry the words 'Squacquerone di Romagna — Denominazione d'Origine Protetta' or 'Squacquerone di Romagna – DOP', accompanied by the EU logo, with the name rendered in Sari Extra Bold Italic font in Pantone No 2747 blue and white. The product must be maintained at a temperature between 0 °C and +6 °C, and the maximum storage temperature must be indicated on the label.
