Azeites do Ribatejo is a protected designation of origin covering extra virgin and virgin olive oils produced, processed, and packaged within a defined area of the Ribatejo region of Portugal. The oils are obtained exclusively by mechanical extraction from Galega Vulgar, Lentisca, and Cobrançosa olives grown within that area, with Galega Vulgar and/or Lentisca required at a minimum of 55% of the blend.

Registered under file number PDO-PT-0219, Azeites do Ribatejo is a protected designation of origin for extra virgin and virgin olive oils produced entirely within a defined geographical area in Portugal's Ribatejo region, encompassing named municipalities including Abrantes, Santarém, Tomar, Torres Novas, Ferreira do Zêzere, and others, with certain municipalities included only in respect of specified parishes. Oils must be obtained from the fruit of Olea Europaea L. by mechanical means only, in mills located within the defined area. The permitted variety composition requires Galega Vulgar and/or Lentisca at a minimum of 55%, Cobrançosa at a maximum of 45%, and other varieties at a maximum of 5%; the Picual variety is expressly prohibited. Secondary extraction methods, enzymes, and talc are prohibited. All operations — cultivation, milling, and packaging — must take place within the defined geographical area. The specification sets physical and chemical parameters including a maximum acidity of 0.8% for extra virgin oils and 1.5% for virgin oils, a maximum peroxide value of 15 meq O₂/kg, and minimum total sterols of 1,000 mg/kg, among others. The organoleptic profile is described in the specification as medium fruitiness, green and ripely fruity with notes of apple, and a golden yellow colour occasionally tinged with green; extra virgin and virgin oils must have an average of zero defects. Each packaged unit bears a numbered Certification Mark enabling traceability. The inspection body is Certis, based in Évora, Portugal. Labels must carry the words 'Azeites do Ribatejo — Denominação de Origem Protegida' and the corresponding Community logo.
