Cabrito Transmontano is the carcass or meat of male or female kids of the Serrana goat breed, aged between 30 and 90 days, fed exclusively on mother's milk, and reared within a defined area of 13 municipalities in the Trás-os-Montes region of Portugal. Carcass weight must fall between 4 kg and 9 kg.

Registered as a PDO under file number PDO-PT-0225, with EU protection dating from 2 July 1996 and eAmbrosia identifier EUGI00000013235, Cabrito Transmontano covers the carcass and meat of kids of the Serrana goat breed, either male or female, born of animals entered in the zootechnical register and/or in the flock book for that breed. Animals must be between 30 and 90 days of age and fed on mother's milk. The defined production area comprises municipalities within the districts of Bragança and Vila Real: Mirandela, Macedo de Cavaleiros, Alfândega da Fé, Carrazeda de Ansiães, Vila Flor, Torre de Moncorvo, Freixo de Espada à Cinta, Mogadouro, Vimioso, and specified parishes of Bragança in the district of Bragança; and Alijó, Valpaços, and Murça in the district of Vila Real. Localisation of holdings, rearing, and slaughtering must all take place within this defined area. Carcass weight must be between 4 kg and 9 kg. The carcass may be marketed whole, as a half, in quarters, or in other portion sizes; packaging is compulsory when sold in quarters or smaller portions. The product may be sold chilled or frozen, with a maximum freezing period of six months; frozen product must be labelled as such. The label affixed to the leg region must include the designation D.O.P. 'Cabrito Transmontano'. The Serrana breed feeds on wild-growing plants, including heaths, heathers, and carqueixa (Pterospartum tridentatum), which may provide up to 90 % of the adult animals' nutrition needs.
