Pão de Ló de Ovar
Also known as: Pão de Ló de Margaride
Pão de Ló de Ovar is a Portuguese sponge cake produced exclusively within the municipality of Ovar from eggs (principally yolks), sugar, and wheat flour. Its defining characteristic is the pito, a creamy, partially liquid interior resulting from controlled baking time, enclosed beneath a fine, slightly moist golden-brown crust. It is shaped like a country loaf and presented in a paper-lined earthenware mould.

Registered as a PGI on 28 May 2015 under file number PGI-PT-01341 (eAmbrosia identifier EUGI00000015919), Pão de Ló de Ovar may be produced only within the municipality of Ovar, comprising the civil parishes of Esmoriz, Cortegaça, Maceda, Arada, Ovar, São João, São Vicente, and Válega. The specification permits only four raw materials: fresh eggs, white sugar, wheat flour of type 55, and salt, the last being optional. Eggs and sugar are beaten together for up to 20 minutes until the mixture turns whitish, after which sifted flour is incorporated. The mould — black or red earthenware — is lined with baking paper of 100 to 120 g/m² folded eight times to form four even pleats, later trimmed with pinking shears. Baking takes place in an electric oven at between 140 and 200 °C for 50 minutes to 2 hours, depending on the liquid weight of product to be produced. The quantity of pito, the moist interior that may run when the cake is cut, is determined by baking time and is described in the specification as a distinguishing characteristic. The product is produced in two size categories: Miniatura or Infantes, weighing between 100 and 125 g, and Normal, weighing between 485 and 1 500 g. Labelling must bear the words 'Pão de Ló de Ovar – Protected Geographical Indication' or 'Pão de Ló de Ovar PGI', together with the registered logo. Documentary evidence of production in Ovar dates to 1781.
