The story
Before the island was a summer, it was salt. The pans at Ses Salines have been worked since the Phoenicians, and what grows around them — figs, almonds, wild herbs on the dry hills — has the same plain, sun-hard character. This is the smallest box, and the one that tastes most like a place rather than a menu.
