The story
The Basque coast treats a tin of fish the way Burgundy treats a bottle. Everything here is a small thing done to the limit: the anchovy filleted by hand, the cider poured from a height, the cheese smoked over beech because the shepherds kept it near the fire. It is the largest box in the range, and the one with the least on any single plate.
