Ibéricos Guillén

Company
Manuel Guillén S.A.

The story

Ibéricos Guillén is based in Guijuelo, in the Salamanca province of Castilla y León, Spain, and traces its activity to 1971, when the company began producing and selling products derived from the cerdo ibérico. Manuel Guillén S.A. was formally established in 1986, and two years later the company returned to its roots in Guijuelo. The company owns approximately 1,400 hectares spread across two estates — «El Tagarrais» and «Do Gato» — situated in the southwest of the peninsula, where it raises its own pigs of raza ibérica, both pure and crossed with Duroc.

The animals are raised in freedom, eating acorns and natural pasture. The facilities in Guijuelo are surrounded by the sierras of Béjar, Francia, and Gredos, and the curing follows traditional methods: the temperature in the natural drying room is controlled by opening and closing windows to make use of the thermal contrasts of the area, as has been done throughout the history of making products derived from the cerdo ibérico. Three generations of the Guillén family have now worked in the sector, and the company is consolidated both nationally and internationally.
